Haupia Sauce – Not your mother’s gravy

haupia_sauce_on_cookies In general, haupia is a pudding. In some references other combination of coconut milk and cornstarch have the same ‘haupia’ label. In this recipe it sits on the border of what could be considered ‘haupia’. It definitely smells like haupia, but without the same consistency, is it still fair to define it as such? Regardless of actual definitive terms, it was a quite tasty and different approach to any sort of desert sauce. Such a concoction would be much better served on pancakes or waffles, but cookies where what was available at the time. Even so, if one is a cookie nut ( no pun intended on coconut ) the combination of coco-nutty goodness and gooey chocolaty munchies was a nice combination. The haupia sauce added it’s subtle coco-nutty flavor  into the warm and creamy chocolate chunk cookie taste. Unfortunately the haupia sauce has the appearance of beef gravy from the brown sugar and vanilla, but if one can overcome this visual offense, it’s a great eat. Easy to make, and as stated previously, better on pancakes. Enjoy the recipe and have a haupia filled day…

Recipe: Haupia Sauce


  • Ingredients o 1/2 cup brown sugar
  • 1 teaspoon cornstarch
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla
  • 1 (14 ounce) cans coconut milk, shaken well before opening


  1. In a saucepan, combine brown sugar, cornstarch and salt. Add vanilla and coconut milk and simmer until thickened.
  2. Cook or medium heat until it thickens.
  3. Serve warm over pancakes or crepes.
